Baba Ghanoush / Mtabbal
Baba ganoush is a simple and classic dish. This Levantine appetizer consists of roasted eggplant, garlic, lemon, tahini, and of course olive oil. Delicious and healthy, as well as simple and tasty, this is always a crowd pleaser.
Ingredients
The ingredients below will accommodate 2-4 servings
Ingredients:
1 large eggplant
3 tablespoon of tahini sauce
1 whole lemon
2 tbsp yogurt
1/4 cup of olive oil
1-2 cloves of garlic
1 tsp of salt
Optional to add pomegranate and parsley to garnish and to serve with pita bread
The Baba Ganoush can be made ahead of time and stored in an airtight container in the refrigerator for up to four days. Let it come back to room temperature before serving.
Preparation
Step 1
Using a fork or knife poke holes in the eggplant and then wrap in aluminum foil. Broil on high all sides until charred and insides are tender (about 30 minutes). When you poke it with a fork it should come out clean. Remove from broiler and leave for 15 minutes to cool down. Open foil and use a spoon to peel the skin. Then slice the eggplant and mash until smooth.
Step 2
Using a deep bowl add the tahini, lemon, minced garlic, salt, and yogurt. Mix well. Then add the eggplant to the mixture and mix again.
Step 3
Transfer to a serving bowl and drizzle with olive oil. Optional to garnish with parsley and pomegranate. Serve with pita bread
