Burghul / Bulgur (Pilaf with tomatoes)
Middle Eastern style bulgur pilaf is a classic hearty and healthy dish that is easy to make and packed with flavor coming from herbs, onions, and tomatoes. Bulgur is an alternative to rice or bread and can be served with many dishes such as kebab and other grilled meats. You can also enjoy bulgur with just plain yogurt or tzatziki.
Ingredients
The ingredients below will accommodate 2-4 servings
Ingredients:
2 cup of coarse burghul
1 chopped onion
1-2 green bell pepper (or chili if you prefer spicy)
2 minced garlic
2-4 medium-sized ripe tomatoes
2 tablespoons of tomato sauce
1/4 cup of olive oil
Spices:
1 tsp of salt
1 tsp of black pepper
Optional: Cayenne or red crushed pepper
Garnish: (is optional)
Pinch of fresh chopped parsley
Pinch of fresh chopped mint
Preparation
Step 1
Start by chopping the onion, garlic, bell pepper, and peeling the tomatoes. Then wash the burghul 3-4 times.
Then using a deep fry pan (with a lid) add olive oil and sauté the onion until softened. Then add the garlic and pepper and let it simmer for 2-3 minutes or until they become brown. Once they are brown add the chopped tomatoes and mix them. When they start to release the juice add the tomato sauce, spices, salt, pepper, cumin, coriander, and mix them. Cooking the tomato paste for a few minutes will help it release more color and flavor into the dish.
Step 2
Add in the washed burghul and stir well so it's equally distributed. Turn the heat to medium-high and add the water (use boiled or warm water) to just cover the ingredients. Once it starts simmering, put the lid on and let it cook on medium to low heat until the water is almost completely evaporated.
Step 3
Wrap the lid in a clean kitchen towel and place it back on the pot. Turn the heat to low and cook for another ten minutes. Turn the heat off, let the bulgur sit for 5 minutes then fluff it with a fork.
- SERVING SUGGESTIONS
As depicted, bulgur pilaf is usually served individually. Transfer some bulgur pilaf to a small bowl and press it well. Place a plate on top of the bowl and turn it upside down. The burghul will come out easily as a beautifully shaped dome.
