Chicken and Potato In the Oven
Highly nutritious and filling, potatoes are a vegetable rich in vitamins and minerals beneficial to the body. This famous dish consists of potato and chicken, baked in the oven. Below you will find a recipe for this tasty and hearty meal, packed with a ton of flavors.
Ingredients
The ingredients below will accommodate two servings.
• 3 Medium sized potatoes (peel and slice into circular shape; 1/2 inch in thickness)
• 1 onion (slice in circular shape; 1/2 inch in thickness)
• 3 cloves of fresh garlic
• 1 whole chicken, cut into pieces as desired
• 2 tomatoes (slice in circular shape)
• 1 eggplant (slice in circular shape)
• 1 tsp of salt
• 1 tsp of smoked or regular paprika
• 1 tsp of chicken powder
• 1 tsp of ground 7 spices (this is a blend of spices typically found in Middle Eastern markets)
• 1/2 tsp of ground black pepper
• 1/4 cup of olive oil
Preparation
Step 1
We need to first prepare the ingredients on the stove by placing your deep pan on medium heat and adding the olive oil and the chicken face down. Fry the chicken for 10 minutes on each side, then add the onions and garlic, and mix them with the chicken for 10 minutes.
Step 2
Add the potatoes, eggplant, and tomatoes to the pan as pictured. Then add all of the spices (salt, black pepper, paprika, chicken powder, and 7 spices). Add 2 cups of water to the pan and mix well. Cover the pan and leave it for 20 minutes on medium heat.
Step 3
Turn on the oven for 400F. Cover your pan with aluminum foil and leave in the oven for 20 minutes.
Step 4
Optional to uncover it and broil the top of the tray for about 10 minutes.
Now you have your healthy and tasty dish. You can eat it using pita bread or any kind of bread, or simply eat it by itself, or even with side of plain rice.
