Chicken Biryani
We are so excited to share with you our Middle Eastern style chicken biryani recipe. A favorite dish in many homes, we bring to you this classic meal- deliciously flavored pieces of chicken cooked in a yogurt marinade and then layered with crispy onions, coriander, mint, and basmati rice.
Ingredients
The ingredients below will accommodate 2-4 servings
Ingredients:
1 whole chicken cut into 4 pcs
3 spoons of ghee butter or vegetable oil
1 chopped onion
4-6 cloves of garlic
2-4 green chilies (optional)
2 diced potatoes
2 spoon of salt
4-6 cardamoms
4-6 whole cloves
4-6 whole spice
4-6 bay leaves
3 spoons of plain yogurt
1 & 1/2 spoons of turmeric
1 & 1/2 spoons of coriander
2 spoons of garlic and ginger paste (or just ground ginger
2 spoons of biryani mix if you have (you can find this in an Indian bazaar)
pinch of chopped cilantro
pinch of chopped fresh mints
2 Cups of basmati rice
Optinal: Saffron, red food coloring, charcoal to smoke the food, raisins and almonds
Preparation
Step 1
Add ghee butter to a deep pot and then add the chicken with the spices and mix (whole spices, salt, bay leaves, cardamoms, cloves). Cook on medium heat until golden color on both sides. Now add the yogurt, turmeric, coriander, ginger garlic paste, and biryani mix. Mix the seasonings well and then add the chopped onions, garlic, optional chilis. Add 1/2 cup of boiled water and the potatoes and it cook for about 20 minutes. Add chopped cilantro and turn off the stove.
Step 2
In a separate deep pot we want to cook the rice halfway- wash the basmati rice first and add it to the pot with 1 spoon of ghee butter (or vegetable oil). Add 2 cups of water, with some cardamoms, cinnamon, and cloves, and let it cook on low heat for about 10-15 minutes.
Step 3
In a separate pot, lay the cooked chicken down with some sauce. Start layering the rice on top. Add around 1 cup of boiled water and cook on low heat for 20-30 minutes.
Step 4
Put the dish on a serving plate. Garnish with cilantro, chopped mint, almond, and raisins.
Optional: get some Saffron and mix it with red food coloring or by itself with some vegetable oil. Pour it on top of the rice for flavor and color.
Optional: Activate a piece of charcoal and lay it in a aluminum foil. Pour some oil on it to give the food a smokey flavor.
