Native Mujaddara
This is a classic Mediterranean, Halal dish which contains no meat or meat byproducts, ideal for vegetarians and vegans. This dish consists of cooked lentils and burghul (dried and ground wheat) which is garnished with sautéed onions
Ingredients
The ingredients below will accommodate two servings.
1/2 cup Lentils
1 cup coarse burghul
1 white onion
1/4 cup Olive oil
1 tsp salt
Optional Shepherd Salad
2 tomatoes
2 cucumbers
4 cloves of fresh garlic
Pinch of parsley and mint
Salad Dressing
1 lemon
1/4 cup of olive oil
1 tsp salt
Preparation
Step 1
Add the lentils into a pot with 3 cups of water, over high heat, for 15-20 minutes until the texture is soft.
Step 2
Wash the burghul two or three times and let sit in water for 15 minutes.
Step 3
Slice onions and sauté with olive oil, keep over low heat until they become brown.
Step 4
When lentils have become soft, add burghul over lentils and half of sautéed onions. Then add an additional 2 cups of water, let them cook for 15-20 minutes over low heat ..... While the food is cooking, you can begin to prepare your salad.
Step 5
Dice tomatoes and cucumbers and add to bowl. Add pinch of chopped parsley and mint, then add minced garlic cloves to salad.
Step 6
For the dressing, squeeze lemon and then add salt and olive oil to lemon juice. Pour the dressing and mix all ingredients together.
