Lentil Soup
Ready for a hearty dish that's vegan/ vegetarian friendly? Check out our lentil soup that certainly packs a punch for flavor and is the perfect meal for any time of the year.
Ingredients
The ingredients below will accommodate four (4) servings.
1 cup of orange lentil
1 onion (diced)
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
Bunch of cilantro
1 whole lemon to squeeze for juice
4-6 Pita bread
Preparation
Step 1
Wash the lentils 2-3 times to remove the starch, then dice the onions.
Step 2
Add the onions to the cooking pot with the 1/4 cup of olive oil. Add the salt and the black pepper, cook until the onions are light in color and then add the orange lentil. Mix it for a few minutes and then add 4-6 cups of warm water. Cover the pot to cook for 30 minutes.
Step 3
Cut the pita bread into squares using a knife or kitchen scissor (like in the picture)
Optional: for some crunch, you can fry some of the bread to use as a topping for the soup
Step 4
You can eat it like a soup or add the soup to the bread. Garnish each plate with cilantro and lemon juice.
