Chicken Mandi
Chicken Mandi will make your tastebuds soar. Delicious roasted marinated chicken with smoky rice that will easily become a comfort food. This popular Arabic dish with its deeply flavorful rice and perfectly cooked chicken is sure to be a crowd pleaser.
Ingredients
The ingredients below will accommodate 3-4 servings
Ingredients:
1 whole chicken cut into 4 pieces
2 cup of basmati rice
1 medium diced onion
2 cloves of garlic
2 tsp of fresh ginger
Optional: 3 hot peppers
1/4 cup of ghee butter or corn oil
1 tsp of salt
2 tsp of 7 spices
4 sticks of cinnamon
4-6 cloves of cardamom
4-6 cloves of cloves
1 tsp of chili
1 tsp of cumin
2 tsp of chicken bouillon powder

Chicken marination mix:
1 table spoon of plain yogurt
1/4 cup olive oil
1 tsp of salt
1 tsp of black pepper
1 tsp of smoked paprika
1 tsp of turmeric
2 tsp of oregano
1 tsp of garlic powder
Preparation
Step 1
Using a deep baking pan, wash the rice twice to remove the starch. Then add the diced onions, crushed garlic, pepper and fresh ginger to the rice. Proceed to add ghee butter or corn oil, salt, and all the spices- 7 spices, cinnamon sticks, cardamom, cloves, chili, cumin, chicken bouillon, and mix everything.
Step 2
In a separate bowl mix the marination ingredients- olive oil, salt, black pepper, smoked paprika, turmeric, oregano, and garlic powder. Marinate the chicken well and leave on the side.
Step 3
Cover the rice with aluminum foil and make small holes around the foil using a fork. Then get the chicken and lay it facing down on the aluminum. Cover with parchment paper and cover with aluminum foil again. Make sure everything is covered well. Bake for 1 hour at 400F degree.
Step 4
Uncover the aluminum from the chickens and then the rice. Put the chicken on top of the rice and broil for 10 minutes.
Optional: roast some almonds and raisins and add it as a topping to the rice.
