UP-SIDE DOWN (Maqluba)
We've got the perfect meal to satisfy your cravings and become a staple comfort food. Maqluba translates from Arabic to 'upside down', and has ingredients that covers all four food groups.
The best part of this dish is the grand finale! After the food is finished cooking, you take the entire pot and flip it upside down onto a large serving platter. Super fun activity for the entire family. The dish is the ready for everyone to dig in
Ingredients
The ingredients below will accommodate 2-4 servings
Ingredients:
1 whole chicken cut into 4-8 pieces
2 cups of rice
1 potato cut into circles or wedges
1 eggplant cut into slices
1 cauliflower cut into small pieces
1 tomato cut into circles
1/2 onion (diced)
1 tsp salt
1/2 tsp black pepper
1tsp of 7 spices
4-6 bay leaves
4-6 cardamoms
2-3 cinnamon sticks
Preparation
Step 1
Put the chicken in a deep pot and let it boil for 30-45 minutes with salt, bay leaves, cinnamon sticks and cardamoms.
Step 2
Using an air-fryer half fry the potatoes, then the eggplant slices, and finally the cauliflower. Once done leave them on the side. Wash the rice 2-3 times to remove starch (you can use basmati rice or jasmine)
Step 3
Start layering the vegetables into a large cooking pot as shown in the picture, (tomato, potato, eggplant, then cauliflower). Once the layers are completed add the chicken face down. Then place the washed rice on top. Add the salt and the 7 spices then 2-3 cups of boiled water.
Step 4
Turn on the stove to high heat until the pot starts to boil. Bring down the heat to low for around 20-30 minutes and now it should be cooked and ready.
Flip over the pot onto a large serving platter (UP SIDE DOWN).
