Shakshouka (Shak-Shoo-Kah)
Shakshouka is a deliciously easy and healthy dish to make. Originating from the Middle East and North Africa it is a simple combination of tomatoes, onions, garlic, spices, and poached eggs. Usually eaten for breakfast, this dish can also be consumed any time of the day given how filling and tasty it is. This is one recipe I guarantee you’ll make time and again.
Ingredients
The ingredients below will accommodate 2-4 servings
Ingredients:
1 large chopped onion
1-2 green bell pepper (or chili if you prefer spicy)
2 minced garlic
4-6 medium-sized ripe tomatoes
2 tablespoons of tomato sauce
2-4 eggs
1/4 cup of olive oil
Spices:
2 tsp of salt
1 tsp of cumin
1 tsp of black pepper
1 tsp of coriander
Optional: Cayenne or red crushed pepper
Garnish: (optional)
Pinch of fresh chopped parsley
Pinch of fresh chopped mint
Preparation
Step 1
Start by chopping the onion, garlic, bell pepper, and peeling the tomatoes, then using a fry deep pan (with a lid) add the olive oil and sauté the onion until softened. Add the garlic and pepper and let it simmer for 5 minutes. Then add the chopped tomatoes with the tomato sauce, add the spices, salt, pepper, cumin, and coriander. Then bring the tomatoes to a boil, cover, and let it simmer for 15 minutes or until the sauce has thickened.
Step 2
When the sauce is ready, make some holes with your spoon and crack your eggs into the holes you created. Cover the skillet and allow the eggs to simmer in the sauce over medium to low heat until the egg whites have settled.
Step 3
Once the eggs are ready, garnish with the parsley and mint and serve immediately,
There is no right or wrong way to serve this tasty dish, but traditionally we eat it with bread such as pita or garlic bread
